Born from a time before refrigeration, this bold, barrel-aged lager spends months maturing in the historic caves beneath our brewery before its annual fall release. Robust and full of character, it reveals rich layers of sweet caramel, toasted oak, and soft vanilla.

2025 Edition: A complex blend of malts forms the foundation, pouring deep and dark with a warming, whiskey-like depth—intensified by time spent in Tattersall Distilling Rye barrels. Full-bodied and satisfyingly smooth, it’s a beer made for long nights, cold weather, and those who savor the darker side of malt.

Behind
the brew

In a nod to our 19th-century brewing roots, this limited-edition beer is barrel-aged in different whiskey barrels each year and naturally cooled in our historic ice caves, deep beneath our 1860s brewery. Before the days of refrigeration, these caves kept our lagers cold during the aging process, and today, we utilize them for this special brew.

Back then, brewery workers would trek to the river to cut massive blocks of ice, hauling them back by horse and wagon. Brewers then stored the ice in the caves and covered it with sawdust to prevent it from melting, allowing it to last well into the summer. Once the ice was gone, production paused until cooler weather returned.
