Behind the brew
Pilsners have been considered the original pale lager. Named after the Czech city of Plzeň, this style revolutionized brewing by introducing bottom fermentation at colder temperatures, a game-changer compared to the warmer, top-fermenting process used for ales.
Germany soon embraced the style and, together with the Czech Republic, set the standard for world-class lagers. Today, pilsners remain the most popular beer style on earth.
When our president and fifth-generation descendant, Ted Marti, returned to New Ulm after brewing school in Germany, one of the two recipes he brought back with him was a pilsner. Those beers became the first of their kind in the country and helped spark the early movement toward what we now know as craft beer.
