Behind the Brew
In a nod to our 19th century brewing traditions, this limited edition beer was barrel-aged in rya whiskey barrels and naturally cooled in our historic ice caves located deep below our 1860s brewery. Before the days of refrigeration, our caves were used to keep the beer cool during the lagering process and today they still can serve that same purpose. Brewery workers used to walk down to the river and cut large ice blocks that were then carried back to the brewery by horse and wagon. The ice blocks were placed in the caves and covered in sawdust to keep them from melting. Ice blocks often lasted until early summer and production would cease until it was cool enough to keep the beer cold again. Our Cave-Aged Barrel-Aged originated as part of the Stag Series, but has become a recurring series in recent years.
